The Emilio Colussi’ s production has the merit of having been the first bakery in Venice to have rediscovered the typical but almost forgotten Venetian pastry and cakes. Examples are the Focaccia Veneziana and what can be described as “dry” cakes such as Pan dei dogi, Pan dei pescatori and zaletti biscuits, all made with one part maize flour
