Pancarrè is a kind of bread used to prepare “tramezzino” (typical venetian stuffed sandwich) and our Bakery is specialized to bake it.

Pancarrè can be made with whole flour, or wholemeal flour, or multigrain flour or rye flour.

We bake this soft cake almost all year round and it has always been a speciality of our bakery. 

The Focaccia Colussi is produced with low fats and natural and finest quality ingredients which gives a light and soft cake.

Zaletti, Buranelli, Pan del pescatore, Pan del doge, Fave veneziane are all handmade biscuits coming from the Venetian tradition. When Venice was the center of trade with Asia from the 13th to the 19th centuries, organic baking traditions were born, the same that are still praticed today. Sailors and explorers carried foodstuffs on board war and merchant gallons that could survive the long voyages in unsafe seas. Among the produtcs were same sweets and simple goods to used as treats, that reflected their Venetians origins both in the name and in the taste.

St. Martin feast: on November 11. in Venice, we celebrate St. Martin’ day making a shortcrust pasty cake: it’s the St. Martin’s horse topped with chocolates and candies. It’ s about all a children’s party.
